Hi T Wood, we have shipped the Cuban sandwiches overnight. The two (2) pitfalls are:
1. the wonderful, crisp Cuban bread softens once its wrapped; it can be a bit chewy.
2. overnight shipping is quite expensive, particularly because we pack 'em with dry ice.

Hi Catherine, we do offer catering delivery services.While there is not a minimum purchase required, we do have a delivery fee that ranges from $25 to $100 for peak times (generally through lunch time). In the afternoon (off-peak) the fee is from $15 to $100. What determines the fee is the delivery zone. Generally, folks use the peak service for larger orders and the off-peak for cake drop-off. Great question! I regularly attend the annual national restaurant show and look for alternatives. Right now, the alternatives don't have the ability to safely transport food (keep the food in and everything else out) and durability to do so for 5-7 days since some of our menu items are held that long (and longer if frozen). Let me give an example. Saturday I got a bowl of Poke from a new restaurant that's opened. The bowl was made of heavy-duty cardboard and had a plastic cover. Today I took the bowl out of the fridge to enjoy the Poke (it was delicious!). The cardboard was doing ok---a little soft on the bottom---but had lost some of its rigidity in the refrigerator, which caused the lid to be loose. And in fact, the alternative vendors at the show clearly state that their products are meant for one day use. So for now, we're using plastic because it does the best job AND I'm on the lookout for better. All the best, Jeff Mount

Temperature makes a big difference in shelf life so depends on how cold you keep your freezer. We run ours between -13 and -24 Fahrenheit. While we have a 90 day shelf life, we make quiches weekly so generally they're turned over every 2-3 weeks.
How cold is your freezer?
When you keep ice cream in it, is it really hard when you scoop up a bowl? Then your freezer is probably running closer to 0 F and you've easily got a couple of months. But if you can easily dip the ice cream when you pull it from the freezer, yours is probably running closer to 10 F. You have about 3-4 weeks in that instance.
But why wait so long? Enjoy it now and we'll bake another for you!
