The chief is truly professional. Being to many sushi bar in the world but so far this is the best ! We know Shimizu through our friend, now all of my family members go to Shimizu if they visit Tokyo. Personally like chief Shimizu San's character. Shimizu simply uses akazu-red vinegar for sushi rice. Lunch around JPY 15,000-JPY20,000.

sushi rice is too sour for my liking. stern looking staff, average food, extraordinary price. 2 people,2 beer maybe 12 course each for a total of 40000 plus YEN. I am not yet a sushi expert, so just my person opinion.
