The rolls are always baked fresh daily. They are open Monday through Friday from 6:30am to 5pm and Saturday from 6am to 5pm they are closed on Sunday. The best time to get the best variety of everything is early shortly after they are open. Depends on the day if there have a lot of people. As far as gluten free that I don't know. Your best bet would be to call them personally call there first. They do have a website in which I provided for you there they do have phone number to contact them. They have the best Donuts cakes and Breads in the whole state!!!!
