Bouncy cheesecakes are always a hit-or-miss, and tend to be eggy. Keki makes great ones, you can taste cheese and not eggs. It's a fun texture, but for us, one was enough to share.

From what I understand, yes. They make fresh batches multiple times a day. It's best to get them right out the oven or 15 mins after so you can see it jiggle, lol.
