Who knew such great food was available in Lincoln? I was skeptical to try a Mexican restaurant self described as progressive for fear of them putting a kooky spin on classic dishes. They kept the experimentation to a minimum and focused on making really delicious meals that made me want more. The hand crafted margaritas were absolutely perfect and the desserts were beyond description.

Great food, service, atmosphere! One of Lincoln's best. Everything is good and well presented. Staff are welcoming and helpful! Drinks are awesome. Go here, it does not disappoint!

One of my favorites in Lincoln! Copal caters very well to people with dietary restrictions. They have gluten free and vegetarian options. There are many menu options around $10. Feels like you are eating higher quality food than typical Mexican food. Would recommend to anyone!!
