Hi. We can not put our babkas through our slicer because it makes the blades sticky.
Nobody uses transglutaminase as a yeast substitute. They serve different purposes. Transglutaminase is used to strengthen gluten (make the dough stretchier, so it gets a better rise.)
That said, I'd be extremely surprised if they use transglutaminase.
