Hi Mike, We smoke our Prime Briskets whole. Burnt ends are just the point (fatty portion) of the brisket separated and put on the smoker. We have done it once in awhile. We don't get much of a request for them as you would in KC. We may offer them again sometime as a special. Thank you for asking. Pit Master Patrick
